Best Coffee for Chemex

The Chemex is one of the most beautiful objects in the coffee world β€” and one of the most demanding. Its thick paper filter removes nearly all oils and fine particles, producing a cup of exceptional clarity and cleanliness. That clarity is a double-edged sword: it highlights everything good about a great coffee, and everything lacking in a mediocre one.

What Makes the Chemex Different

The Chemex uses a proprietary filter that is 20–30% thicker than standard paper filters. That thickness removes more oils and sediment than any other pour over method, producing a cup that is exceptionally clean, bright, and tea-like in its clarity. The flavors are precise and unmuddied β€” you taste exactly what's in the coffee, nothing more.

That's why bean selection matters more for Chemex than almost any other method. There's nowhere to hide.

What Makes a Coffee Good for Chemex?

  • Light to medium roast β€” the Chemex's clarity showcases origin character. Light and medium roasts with distinct flavor profiles shine here. Dark roasts can work but lose some of their character through the thick filter.
  • High quality, fresh beans β€” the Chemex will expose stale or low-quality coffee immediately. Fresh specialty-grade beans are non-negotiable.
  • Distinct tasting notes β€” fruit, floral, and bright coffees are particularly well-suited. The Chemex lets those notes come through with exceptional clarity.
  • Medium-coarse grind β€” slightly coarser than V60 to account for the slower flow rate through the thick filter.

Chemex Brewing Guide

  1. Bring water to 200Β°F (just off boil)
  2. Place the Chemex filter in the top, with three layers facing the spout
  3. Rinse the filter with hot water β€” discard the rinse water
  4. Add 42g of medium-coarse ground coffee for a 700ml brew (1:16.5 ratio)
  5. Start your timer and pour 80g of water for the bloom β€” wait 45 seconds
  6. Pour slowly in concentric circles, keeping the water level consistent
  7. Total brew time should be 4–4.5 minutes
  8. Remove the filter and serve immediately

Common Chemex Mistakes

  • Grinding too fine β€” causes slow flow and over-extraction. The thick filter already slows things down β€” grind coarser than you think.
  • Pouring too fast β€” disrupts the coffee bed and produces uneven extraction. Pour slowly and deliberately.
  • Skipping the rinse β€” the thick filter has a papery taste that transfers to the cup if not rinsed. Always rinse.
  • Using stale beans β€” the Chemex will expose this immediately. Use fresh beans within 2–4 weeks of the roast date. All Milestone coffee is roasted to order β€” freshness is guaranteed.
