Our Ethiopia Natural comes from the Yirgacheffe region of southern Ethiopia — one of the most celebrated coffee-growing areas on earth. At elevations between 1,700 and 2,200 meters, cool temperatures, rich soil, and consistent rainfall create ideal conditions for slow cherry development and exceptional flavor complexity. Ethiopia also produces hundreds of indigenous heirloom coffee varieties never formally catalogued anywhere else — genetic diversity that makes Ethiopian coffee unlike anything from any other origin.

The Process
Naturally processed — the whole cherry is dried in the sun with the fruit intact for 3–6 weeks. The fruit ferments around the bean, and the sugars and flavor compounds slowly infuse into it. The result is intense fruit sweetness and wine-like complexity that washed coffees rarely achieve. When you open the bag, the aroma alone tells you something different is happening.

How to Brew
Pour Over (Recommended) — The ideal method. Clarity of pour over lets every note come through precisely. 1:15 ratio, water at 200°F, medium-fine grind. Bloom 45 seconds, pour slowly. Total brew time 3–3.5 minutes. Drink it black — this is the method that shows you everything this coffee can do.
Aeropress — Sweet, concentrated, and expressive. 1:12 ratio, steep 2 minutes, press slowly. Blueberry and jasmine notes with exceptional clarity. One of the best Aeropress coffees in our lineup.
Chemex — Thick filter removes oils and produces a tea-like clarity that highlights the floral and fruit notes beautifully. Medium-coarse grind, 1:16 ratio. Total brew time 4–4.5 minutes.
Cold Brew — Unexpected but excellent. Natural sweetness and fruit character come through beautifully cold-brewed. 1:8 ratio, steep 18–24 hours. Serve over ice.

Why does it taste like blueberries?
That's the natural processing — not added flavoring. The fruit ferments around the bean during drying, infusing it with natural fruit flavor compounds. It's one of the most remarkable things that happens in coffee.
Should I add milk?
We recommend drinking it black. Milk masks the fruit and floral notes that make this coffee special. If you prefer milk in your coffee, our Colombia or House Blend are better fits.
Is it good for espresso?
It can work, but it's not our first recommendation. The fruit and floral notes are better showcased in pour over or Aeropress. If you try it as espresso, use a slightly coarser grind and shorter extraction time.
How does Natural differ from Washed Ethiopian coffee?
Natural dries the whole cherry with fruit intact — intense fruit sweetness and wine-like complexity. Washed removes the fruit before drying — cleaner, more tea-like, with floral notes and bright acidity. Both are exceptional. Just different expressions of the same extraordinary origin.
