The Process
Naturally processed — the whole cherry is dried in the sun with the fruit intact for 3–6 weeks. The fruit ferments around the bean, and the sugars infuse into it, producing the characteristic nutty sweetness, smooth body, and low acidity that Brazilian coffee is known for worldwide.
