How We Source Our Coffee

Sourcing is where everything starts. The decisions made before a bean ever reaches a roaster β€” which farms to work with, which origins to carry, what standards to hold β€” determine the ceiling of what's possible in the cup. We take those decisions seriously.

What We Look For

We source specialty-grade coffee. That's not a marketing term β€” it has a specific meaning. Specialty coffee scores 80 points or above on the Specialty Coffee Association's 100-point scale, evaluated by trained Q Graders on attributes like aroma, flavor, acidity, body, and balance. Everything we carry meets that standard.

Beyond the score, we look for coffees with distinct character β€” origins that taste like somewhere specific, not like generic coffee. Ethiopia should taste like Ethiopia. Sumatra should taste like Sumatra. We're not interested in coffees that are technically acceptable but forgettable in the cup. Traceability

We know where our coffee comes from. Not just the country β€” the region, the processing method, and in many cases the cooperative or farm. That traceability matters for two reasons.

First, it's how we verify quality. When you know exactly where a coffee came from and how it was processed, you can evaluate it honestly and hold it to a consistent standard. Anonymous blends from unknown sources make that impossible.

Second, it's how we tell you an honest story. When you buy our Ethiopia Natural, you're not buying "Ethiopian coffee" as a generic category. You're buying a specific coffee with a specific character, grown and processed in a specific way. That specificity is part of what you're paying for.

Ethical Sourcing

We're a faith-driven company, and that shapes how we think about the people in our supply chain. Coffee farming is hard work, often done by smallholder farmers in developing countries who have limited leverage in global commodity markets. We believe the people who grow our coffee deserve to be treated fairly and paid fairly.

We work with importers and suppliers who share that commitment β€” who pay above commodity prices, who invest in long-term relationships with producers, and who can tell us the story of where the coffee came from and who grew it.

We're not perfect, and we don't claim to have solved the systemic challenges of the global coffee trade. But we make intentional choices, and we're committed to doing better as we grow.
