Our Mexico comes from the highlands of Chiapas or Oaxaca — Mexico's two most celebrated coffee-growing states. Elevations between 1,200 and 1,800 meters, rich soil, consistent rainfall, and cool temperatures build natural sweetness and a gentle complexity that makes this coffee effortlessly drinkable. Most Mexican specialty coffee is grown by smallholder farmers organized into cooperatives — many with long-standing organic certifications and farming practices that produce better-tasting coffee alongside better outcomes for the land.

The Process
Fully washed — the fruit is removed before drying, producing a clean, clear cup that highlights the bean's natural sweetness and the gentle character of the origin. Washed processing is standard in Mexico and contributes to the mild, approachable profile the origin is known for.
Ingredients
Single origin specialty Arabica coffee, highlands of Chiapas or Oaxaca, Mexico. Washed process. Medium roast. Roasted to order. Roasted fresh in Temecula, California — in most cases the same day it ships.
Yield: ~17–24 cups per 12oz bag. Larger sizes scale proportionally.
How to Brew
Drip (Recommended) — One of the most drip-friendly single origins we carry. Consistent and delicious cup after cup. 1:15 ratio, medium grind. Chocolate and caramel notes come through clearly in any drip machine.
Pour Over — Highlights the clarity and sweetness with precision. 1:15 ratio, water at 200°F, medium-fine grind. Bloom 45 seconds. Total brew time 3–3.5 minutes. Excellent black or with a small amount of milk.
Cold Brew — Mild acidity and chocolate notes make this excellent cold-brewed. Smooth, sweet, and refreshing over ice. 1:8 ratio, steep 18–24 hours.
Aeropress — Fast, clean, and consistent. 1:12 ratio, steep 2 minutes, press slowly. Chocolate notes are particularly clear in Aeropress.
