Every cup of coffee in the world traces its roots back to one place: Ethiopia. Not metaphorically β literally. The coffee plant, Coffea arabica, originated in the highlands of Ethiopia, and the country has been growing, drinking, and exporting coffee for centuries. If you've never tried Ethiopian coffee, you're missing the origin of everything.
The Legend of Kaldi
The story most people know goes like this: a goat herder named Kaldi noticed his goats were unusually energetic after eating berries from a particular tree. He brought the berries to a local monastery. The monks made a drink from them, stayed awake through evening prayers, and word spread from there.
Whether the story is literally true doesn't matter much. What it captures is real β Ethiopia has a relationship with coffee that is ancient, cultural, and deeply woven into daily life in a way that no other country can claim.
Why Ethiopian Coffee Tastes Different
Ethiopian coffee is distinct in a way that surprises people who are used to darker, more conventional roasts. The flavor profiles are bright, complex, and often fruit-forward β blueberry, jasmine, citrus, stone fruit, wine-like acidity. It doesn't taste like what most people think of when they think "coffee."
That's because of where it grows. Ethiopia's highlands β particularly regions like Yirgacheffe, Sidama, and Harrar β sit at high altitudes with rich soil, distinct microclimates, and wild coffee varietals that have never been cultivated anywhere else. The genetic diversity of Ethiopian coffee is unmatched. There are thousands of wild varietals growing in Ethiopian forests that haven't even been catalogued yet.
Processing method also plays a major role. Ethiopian coffee is processed two primary ways:
- Washed (wet process) β the fruit is removed before drying, producing a cleaner, brighter cup with more clarity and floral notes. Yirgacheffe washed coffees are the classic example.
- Natural (dry process) β the whole cherry dries with the fruit intact, imparting intense sweetness and fruit character. Ethiopia Natural coffees often taste like blueberry jam or red wine β in the best possible way.

Our Ethiopia Natural
The Ethiopia Natural we carry is processed using the dry method β whole cherries dried in the sun, allowing the fruit to ferment slightly and infuse the bean with sweetness and complexity. The result is a cup with blueberry, jasmine, and a wine-like quality that's unlike anything else in our lineup.
It's best brewed with methods that highlight clarity and complexity β pour over, Chemex, or Aeropress. French press works too, but you'll get the most out of it with a lighter touch and a medium-fine grind.

Coffee Culture in Ethiopia
In Ethiopia, coffee isn't just a beverage β it's a ceremony. The traditional Ethiopian coffee ceremony involves roasting green beans over an open flame, grinding them by hand, brewing in a clay pot called a jebena, and serving in small cups over multiple rounds. It's a social ritual that can last hours, shared with neighbors and guests as an act of hospitality and community.
